Rajasthan Cuisine

Food
Rajasthani cooking was convinced by both the war-like regimes of its inhabitants and the availability of ingredients in this infertile region.Food that could last for several days and could be eaten without heating was ideal for Rajasthan. Storage of water and fresh green vegetables have all had their outcome on the cooking. It is also known for its snacks like  Mirchi Bada, Bikaneri Bhujia,  and Pyaaj Kachori. Other renowned dishes include Bajre ki roti and Lashun ki chutney, Mawa Kachori from jodhpur, Malpauas from pushkar,  Alwar ka mawa,  and Rassgollas from Bikaner.Originated for the Marwar region of the state is the concept Marwari Bhojnalaya, or vegetarian hotels, today found in many part of India, which approaches vegetarian food of the Marwari people.To reduce the use of water in this desert state they use a 
 lot of milk and milk products to cook.


Sweet dishes

Sweet dishes are never represented to as 'dessert' in Rajasthan, because not like desserts which are taken after the meal, Rajasthani sweets are had before, during and after the meal.

 Typical Rajasthani Meat dishes include: Mohan maans a dish cooked in milk with meat, Laal maans a dish cooked in red chillies curry with meat, Safed maans a dish cooked in curd with meat, Saanth ro achaar pickled wild boar meat, Khad khargosh,  wild hare cooked underground, Bajri ki raab etc..
